So Last night right after supper, I jumped on to my hummus experiment and I made a life altering discovery...I LOVE HUMMUS! It is absolutely delicious. There are tons of recipes out there for Hummus but this is the one that I used and next time I will definitely be experimenting with more ingredients.
1 15oz can of chic peas rinsed and drained
2-3 Tbsp of Lemon juice
1 Tbsp of light Soy Sauce
2-3 cloves of garlic
Toss it all in a food processor and voila! You've got hummus! I tried it with Melba Rounds last night and couldn't believe how much I loved it. It is about 7 points for the whole batch but it makes quite a bit! I would recommend keeping the liquid from the chic peas to use as a thinning agent. The recipe also called for roasted red peppers but I didn't have any on hand and it still turned out fantastic! Many recipes call for oil but it adds so much fat and calories that really just aren't necessary in my opinion.
I'm going to try it out on a few different things. Today for lunch I put it on a veggie wrap (which was absolutely amazing!!) but I may also experiment with a chicken/tomato/Parmesan/spinach/hummus wrap. I recently found a great flatbread that is decently low in points. Dempster's Flatbreads of the World Plain Large wraps. They are 3 points but they are huge and you can make a really large wrap from them. As compared to the Old El Paso wraps, which are 2 points per small wrap (VERY small). Since I'm not a hug fan of whole wheat wraps, Dempster's gets the medal from me.
Here is today's menu...
Breakfast:
1/2 c. fat free vanilla yogurt 1
1c of grapes 1
1 granny smith apple 1
Lunch:
Dempster's Large Plain wrap 3
including: Spinach leaves, cucumber, mushrooms, red onions 0
2 Tbsp of Hummus 1
I fat free vanilla yogurt 1
100 Calorie Pack - Little Bites Strawberry/Oatmeal 2
Total: 10
Supper:
85 g Flax Omega 3 Pasta 5
2 tsp of Basil Pesto 2
fried up veggies: onions, green peppers, tomatoes and spinach
1 tsp of low fat Parmesan cheese 0.5
1.5 c. Brussel sprouts 0
Total: 17.5
Snack:
Quaker Caramel Chocolate Chip Rice Cakes 2
Well that's it for me tonight! Only a few more days until my trip to the States, I can't wait to post my finds!
Oh and I am up to #60 on my list of 100 Things About ME!

ReplyDeletelove hummus! do you have fat free ry krsip in Canada? they are 0 points for 2. I smear a little hummus on and have that with tomato and cucumber for a snack in the afternoons.
